Bhamini's Recipe

When we asked Bhamini what her favorite recipe was, she immediately thought of her favorite veggie dish that she makes often for her family. This recipe comes from Rachel Ray's blog website and Bhamini says she makes it exactly as it's written. It looks delicious!
Roasted Broccolini and Baby Carrots
Ingredients:
- 16 fresh baby carrots or rainbow baby carrots, trimmed and peeled and halved lengthwise
- 2 bundles broccolini, trimmed and larger stems halved lengthwise
- 3 tablespoons extra-virgin olive oil (EVOO)
- Salt and pepper
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons lemon zest
Directions:
1. Preheat oven to 400˚F.
2. Line a baking sheet with foil
3. Add all ingredients into a large mixing bowl and mix/toss them all together to coat the veggies evenly
4. Arrange the veggies in an even layer on the foil lined baking sheet
5. Put into the oven and roast for 45 minutes or until tender and the broccolini tops are crispy at the edges
6. Remove from oven and serve
